Arugula Pasta Salad : 4 Servings

    2 T. chopped walnuts
    1/2 t. salt
    6 oz. uncooked bow tie pasta
    2 c. baby arugula leaves, stems removed
    2 T. minced fresh chives
    1 c. grape tomatoes, halved
    1 T. white wine vinegar
    1 T. olive oil
    1/4 t. salt
    1/4 t. pepper
    3 T. crumbled blue cheese


1. Boil 3 quarts of water and 1/2 t. salt. Stir in pasta and cook until tender, about 11-13 minutes.

2. Remove 1 T. of pasta cooking water and save in a small bowl.

3. Drain pasta, but do not rinse. Place hot pasta in a large serving bowl. Immediately add arugula and toss well. Cover bowl with a lid and set aside until arugula is limp, about 5 minutes.

4. Place walnuts in small skillet and toast over medium-high heat until lightly browned, about 1-2 minutes.

5. Stir chives and tomatoes into pasta.

6. Add oil, vinegar, salt and pepper to the reserved pasta water and mix well. Pour over pasta salad and toss well.

7. Sprinkle walnuts and blue cheese on top.

Makes 4 servings: 1 serving is 1 1/4 cup
