Shepherd's Pie : 6 Servings

Introduction

So, most people may not recognize this as Shepherd Pie, but it is amazing how great this low-fat, high nutrition version tastes! I welcome your suggestions on how to replace the meat with a vegan choice and keep the great taste. Number of Servings: 6

Ingredients

    2 heads of califlour (or 2 frozen pkgs)
    1 onion, chopped
    2 cloves garlic, minced
    1 lb. ground bison (or turkey or beef)
    10 oz. frozen shelled edamame
    1/2 c. beef broth (or bouillon), sodium-free
    2 t. worcestershire sauce
    1 egg

Tips

I am still playing with this recipe to make it more healthy, while keeping the flavor. The next step is to replace the meat - probably with mushrooms. Suggestions welcome!!!


Directions

1. Heat oven to 350 degrees.

2. Spray casserole dish with cooking spray.

3. Boil cauliflower until tender (about 10 minutes).

4. Saute onion and garlic in beef boullion until onions are translucent (about 5 minutes).

5. Add ground bison to onions and brown about 10 minutes, stirring to break up lumps.

6. Add Edamame, w. sauce, and a pinch of salt and pepper to the meat.

7. Transfer meat to casserole dish.

8. Whip cauliflower, egg, and pinch of salt together. Sometimes I add 1/4 cup sour cream if I have some on hand.

9. Spoon cauliflower over meat. Can sprinkle with sharp cheddar cheese if you have some on hand.

10. Bake 20-25 minutes, until golden brown on top.
