1 cup packed brown sugar creamed with 1 softened stick of butter
3 bananas mashed and blended with 2 eggs
1 tsp real vanilla extract and pinch of salt
1 cup oat flour and 1 cup of whole wheat flour blended with 1 tsp baking powder and 1 tsp baking soda
grease loaf baking pan with about 1 tsp of extra virgin olive oil
In large bowl, cream butter and sugar.
In separate bowl mash bananas and blend with eggs. add vanilla and dash of salt, then blend with creamed butter/sugar mixture. Mix dry ingredients in separate bowl, then slowly blend into wet ingredients. Turn batter into greased loaf pan. Sprinkle mixture of sugar and brown sugar on the top (this makes it have a little crunch to the top) Bake at 350 degrees for one hour. Loaf will easily slide out of pan, use knife to separate edges, and turn out onto a plate. Loaf usually tastes better after it cools, or next day. My family doesn't give it a chance and it disappears quickly!
