Hummus (serving=1/4 cup)

Ingredients

    3 Tbsp lemon juice
    2 Tbsp tahini
    1/2 cup dried chickpeas, 1 1/2 cup cooked, or 1 (14 oz) can garbanzos
    3 cloves garlic
    1/2 tsp salt
    1/4 tsp cumin
    pinch cayenne
    1 Tbsp cilantro or parsley, minced
    3/4 jalapeno, chopped
    1 Tbsp olive oil
    1 Tbsp peanut flour mixed with water


Directions

Blend garbanzos, jalapeno, spices, garlic, & lemon juice. Mix oil tahini, & peanut flour mixture. Slowly add while blending into garbanzo mix. When smooth, add cilantro or parsley. Blend. Makes 8 1/4 cup servings.
