Gnocchi with Spinach and White Beans

Introduction

This is a perfect dish to have during Lent for meatless-Friday meals or a vegetarian meal anytime. This is a perfect dish to have during Lent for meatless-Friday meals or a vegetarian meal anytime.
Number of Servings: 6

Ingredients

    1 Tbs olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    Whole Wheat Potato Gnocchi, 1 17.6oz package
    1 15.5oz can Goya small white beans, rinsed and drained
    1 14.5oz can Del Monte Diced tomatoes, basil, garlic & oregano, no salt added; juice and all
    1/4 tsp black ground pepper
    3 Tbs. pecorino romano cheese
    1/2 cup part-skim mozzarella cheese

Directions

Heat tablespoon of oil in a skillet. Add onion and garlic and saute until soft. Add in gnocchi and cook for 5-6 minutes or until gnocchi are golden brown. Add in spinach and kale and cook till wilted. Add in drained white beans, can of Del Monte diced tomatoes and ground black pepper. Stir. Cook till warmed through. Sprinkle cheeses on top. Remove from heat and cover to melt cheese. Serve and enjoy!
