Spicy Mulligatawny

Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1/2 lb chicken breast cut into bite sized pieces
    1/2 lb low fat kielbasa
    1 cup chopped peeled Braeburn apple
    3/4 cup chopped onion
    1/2 cup copped carrot
    1/2 cup chopped celery
    1/2 cup chopped green pepper
    2 tbsp flour
    1 tbsp curry
    1tsp ginger
    1/2 tsp crushed red pepper
    1/4 tps salt
    2 (14oz) cans chicken broth
    1/3 cup Mango Chutney
    1/3 cup tomato paste

Directions

Makes 4 - 1 1/2 cup servings. Use homemade chicken stock to reduce sodium significantly. Cook in large covered fry pan. Saute Chicken in oil 3 minutes. set aside. Spray pan with Pam and saute apples through green pepper 5 minutes stirring frequently. add dry ingredients. cook 1 min. Stir in broth, paste, chutney. Bring to a boil. Reduce heat simmer 8 minutes. Add chicken, cook 2 minutes.
