Introduction

Number of Servings: 3

Ingredients

    Navy beans
    Campari tomatoes (or cherry tomatoes)
    fresh baby spinach
    olive oil
    lemon juice
    feta cheese (plain or flavored)
    fresh ground pepper
    basil or any other seasonings you like

Directions

If using canned beans, rinse them well to get rid of excess salt.

Chop the tomatoes into quarters (or halves, if using cherry tomatoes). Note: if using cherry tomatoes, use more since they are smaller.

Add 1.5 cups of white beans
Add a cup or so of spinach (I tear it into smaller pieces.)
Add feta cheese crumbles.
Add olive oil, lemon juice, pepper, basil and any other seasonings to taste.

Refrigerate to meld flavors (or just eat a serving if you're starving!)

Serving Size: Makes 3 servings that are about 3/4 cup.
