Black Bean Chili

Number of Servings: 6

Ingredients

    1 tbsp olive oil
    1 clove garlic, minced
    2 stalks celery, cubed
    1 med. onion, cubed
    1/2 orange or red sweet pepper, cubed
    2 cups mushrooms, cubed
    1 can black beans, rinsed
    1 can pinto beans, rinsed
    1 can tomatoes diced, whole, or wedges
    1 cup tomatoe juice
    1 cup rice

Directions

Pre heat a dutch oven with 1 tbsp of olive oil and saute minced garlic, onion and celery until softened.

Add remaining ingredients and allow to cook for 30 minutes.

Feel free to adjust seasonings to taste!
