Sweet & Sour Turkey Meatballs

Ingredients

1 1/4 pound ground turkey breast
3 oz fresh white bread, torn into pieces
4 green onions, minced
2 T fresh cilantro
2 cloves garlic, minced
1/2 t ginger
1/2 t pepper
1 large egg, beaten
2 T EVOO
1 medium onion, chopped
1 red bell pepper, chopped
1/2 cup pineapple juice
1/2 cup apple cider vinegar
2 T low sodium soy sauce
2 T cornstarch
Directions
1. Combine first 8 ingredients, mix well.
2. Scoop and roll into 15 meat balls
3. Heat oil over medium, brown meatballs in 2-3 batches, turning until evenly browned on all sides and almost cooked through.
4. Remove to a plate, keep warm.
5. Add onion and pepper to skillet, cook 4-5 minutes until softened.
6. Return meatballs to pan.
7. Whisk together remaining ingredients, add to pan and cook, stirring gently, 3-4 minutes until sauce thickens.
Serve over rice (not included in nutritional counts)
