Vegan Asparagus Quiche

Introduction

Number of Servings: 6

Ingredients

    * *Tofu, Wegmans Extra-Firm, 1 serving (remove)
    * *Soy Milk, Westsoy Organic Unsweetened Soymilk, .5 cup (remove)
    * *100% Pure Olive Oil - Aldi's, 1 tbsp (remove)
    * *Asparagus, 20 spears serving (remove)
    * *onion, red - raw 1/4 cup diced finely
    * *Leek, raw, white part only, cleaned and chopped fine
    * *frontier bac uns, 2 serving (remove)
    * *Organic 9-inch Pie Shell pre-baked @ 375 for 10 min
    * *Turmeric Ground, .5 tbsp (remove)
    * *Dried Thyme, 1 tsp (remove)
    * *basil, dried, 1 tsp (remove)
    * *ALDI - Carlini Extra Virgin Olive Oil, 1.5 tbsp (remove)

Directions

In a blender, mix tofu soymilk, 1 TBS olive oil and the herbs..add 1/4 tsp black salt, if you'd like (it's an Indian salt, actually pink, adds an egg-y flavor to items). Blend till smooth and pour into a mixing bowl.
Using 1.5 TBS of oil, cook asparagus til halfway done. Remove from pan and set aside. Use same pan to saute onion and leek.
Chop asparagus into 1/2" pcs. keep a few longer to decorate top of quiche, if desired.
Add asparagus, Bac 'Uns, and onion & leek mix to tofu mixture. Blend well and then spoon into pre-baked pie shell.

Bake at 375 for 30-40min, till top is golden and the whole thing is firm.
