Pepperoni Chicken

Ingredients

    4 small boneless, skinless chicken breasts
    16 slices turkey pepperoni
    1/3 c mozzarella cheese
    4 T fresh basil leaves, chopped
    1 can 14.5 oz italian diced tomatoes
    1 T italian seasoning (or to taste)

Directions

Place each chicken breast between 2 pieces of waxed paper. Use a can or rolling pin to flatten chicken to 1/2 inch or until uniform. Place 4 pieces of pepperoni and 1/4 of the cheese as well as a T of fresh basil on top of chicken. Roll chicken tight and secure with a tooth pick. Place in a baking dish, pour tomatoes over the top and sprinkle the seasoning over that. Bake at 350 for 25-30 min or until no longer pink in the center. Makes 4 servings.
