5 cups home made turkey broth 3/4 cup chopped onion 4 ozs chopped turkey breast 1/4 cup sliced carrots 3/4 cup frozen peas 6 tbsp red wine or rice wine vinegar 1 tbsp gluten-free soya sauce 2 tsp sugar dash of salt dash pepper ground red pepper or red pepper flakes, to taste dash onion powder dash garlic powder 1 cup firm tofu, cut into cubes 1 cup rice noodles
Prepare turkey broth. Add bits of turkey left over from cooking the bones to make broth. Add onion, vinegar, soya sauce, sugar, salt, pepper, ground red pepper, onion powder, garlic powder, and boil. Add carrot. Cook for a few minutes. Add peas and tofu. Cook a few more minutes. Add rice noodles, and cook until they are soft (only takes a few minutes). Serve immediately. Makes 4 servings.
