Introduction

Nice little snack with a cup of tea with just the right amout of nuts and fruit to make it a nice healthy snack, high in protein and fibre. Nice little snack with a cup of tea with just the right amout of nuts and fruit to make it a nice healthy snack, high in protein and fibre.
Number of Servings: 12

Ingredients

    1/2 cup of margarine
    1 cup Splenda
    1 egg, plus 2 egg whites
    1 tsp. vanilla
    1 tsp. baking powder
    1 tsp. baking soda
    3 ripe bananas, mashed
    1/2 cup dried cranberries
    1 cup roasted soy nuts
    1 cup of all-bran cereal

Directions

cream splenda and margarine together. Beat in egg and egg whites. Add vanilla, baking powder and baking soda to mix. Add mashed bananas and blend well. Fold in cranberries, nuts and bran. Pour into a loaf pan. Bake at 350 degrees F. for 50 minutes.

Serving Size: 1/2 inch slice
