Quinoa Tabouleh

Introduction

I like to make my tabouleh with quinoa instead of cracked wheat. It has more protein and is a whole grain. Plus I add tons of other veggies. Orange juice gives it a little twist. Lots of fiber in this dish!!! I like to make my tabouleh with quinoa instead of cracked wheat. It has more protein and is a whole grain. Plus I add tons of other veggies. Number of Servings: 1

Ingredients

    1/2 cup of dry quinoa
    1 tsp of better than bouillon vegetable paste
    1 bunch of parsley, chopped fine
    1/2 cup chopped carrots
    3/4 cup chopped cherry or grape tomatoes
    1/2 cucumber, peeled & chopped
    1 bunch scallions, chopped
    1 can chickpeas
    juice of one orange
    2 tbs lemon juice
    2 tbs olive oil

Directions

Cook quinoa with one cup of water and bouillon, let cool.
Combine with all other ingredients and mix well.

Serving Size: Makes 8 1 cup servings
