Black Bean Taco Filling

Introduction

I love this recipe because it is very versatile. You can use it in taco shells (soft or crispy), a top a salad, or along side some rice. It is delicious and really doesn't need cheese, salsa, or sour cream, but these can be added if you choose! I adapted this from the Better Homes and Gardens Meatless Tacos recipe. Number of Servings: 8

Ingredients

    1/2 cup water
    1 (15 oz) can black beans
    1/4 cup chopped onion
    1 (8 oz) can tomato sauce
    1 (1 and 1/4 oz) envelope taco seasoning mix
    1 (15 oz) can great northern beans
    1/2 cup frozen corn

Directions

1. Heat olive oil in a large skillet (medium heat) and saute onions until soft. Add 1/2 the water and a can of black beans. Continue to heat until it starts to bubble; reduce heat. Simmer, covered, for 10 to 15 minutes or until black beans are soft and liquid is absorbed.

2. Stir tomato sauce and taco seasoning mix into black bean mixture. Simmer, uncovered, for 5 minutes and then stir in your corn and great northern beans. Heat through.

Serve as desired w/rice, taco shells, or on taco salad (nutrition information does not include any toppings).
