Introduction

yummy vegetarian chili. i will make w beans sometimes...without. recipe is as without. yummy vegetarian chili. i will make w beans sometimes...without. recipe is as without.
Number of Servings: 6

Ingredients

    2 packages Light Firm tofu
    2 14 oz cans no sodium diced tomatoes
    half can tomato paste
    1 white/yello onion chopped
    1/2 - 1 green pepper and red pepper chopped
    1 jalapeno pepper
    2 garlic cloves minced
    1 cup mushrooms chopped
    2-3 tbsp of chili powder
    1 tbsp cumin
    1 tsp or more cayenne pepper

Directions

recipe calls for 6 servings (i believe 1 cup)

heat pan w/ pam spray
add tofu and onion.. cook until onions are tender. stirring occassionally.
add spices, stir to blend well.
add veggies and tomatoes and paste. stir and cook on med low for 40 min.

add beans after if desired or when add peppers and veggies
