Introduction

Quinoa cooked in homemade vegetable soup (pureed) with tomato, asparagus, pepper, onion, and spicy monteray jalapano cheese. Quinoa cooked in homemade vegetable soup (pureed) with tomato, asparagus, pepper, onion, and spicy monteray jalapano cheese.
Number of Servings: 1

Ingredients

    1/2 cup quinoa, 1 plum tomato, 8 asparagus spears, onion slice, red pepper slice, monteray jack cheese.

Directions

Cook quinoa in vegetable broth for 30 minutes - stirring occasionally. Saute onion, pepper, and asparagus in olive oil for only 2 minutes. Add tomato wedges, and cook 2 more minutes. Vegetables should be crisp and not overcooked, Toss into hot quinoa. Top with 1 oz Pepper Monteray Jack cheese. Eat right away.
