Ingredients

1/2 cup quinoa, 1 plum tomato, 8 asparagus spears, onion slice, red pepper slice, monteray jack cheese.
Directions
Cook quinoa in vegetable broth for 30 minutes - stirring occasionally. Saute onion, pepper, and asparagus in olive oil for only 2 minutes. Add tomato wedges, and cook 2 more minutes. Vegetables should be crisp and not overcooked, Toss into hot quinoa. Top with 1 oz Pepper Monteray Jack cheese. Eat right away.
