3 Tbsp. good quality olive oil
    1 large onion sliced thin
    6 cloves garlic, chopped
    6 cups chicken stock
2 large potatoes cut in chunks

4 ounces roasted red peppers (optional)
salt and pepper to taste and add parmesan Reggiano
    grated for topping.

Put oil in large soup pot and put over medium heat. Stir in onion and garlic and cook until onion is translucent, being careful not to burn the garlic. Next, add the chicken stock and potatoes and cook for about 30 minutes at a simmer. Stir in the beans or chickpeas, spinach and red peppers and heat through for 10 minutes.
