Spinach Soup With White Beans and Potatoes

3 Tbsp. good quality olive oil
1 large onion sliced thin
6 cloves garlic, chopped
6 cups chicken stock
2 large potatoes cut in chunks
1 large can cannolini beans or chick peas drained
10 ounces of spinach (fresh)
4 ounces roasted red peppers (optional)
salt and pepper to taste and add parmesan Reggiano
grated for topping.

Put oil in large soup pot and put over medium heat. Stir in onion and garlic and cook until onion is translucent, being careful not to burn the garlic. Next, add the chicken stock and potatoes and cook for about 30 minutes at a simmer. Stir in the beans or chickpeas, spinach and red peppers and heat through for 10 minutes. Season to taste and add the grated cheese to the top of each serving.
