Spiced Black Eyed Pea Medley

Introduction
This delicious black eyed medley is one of my favorite southern Fall dishes. The mix of cumin and spices make for a fragrant and tasty dish. Ingredients

2 cups uncooked blackeyed peas, (rinse well and soaked overnight)
1 medium sized onion, chopped
5 stalks celery, chopped
6 cloves garlic, sliced
1.5 tsp. cumin, ground
1 tsp. white pepper, ground
1 dried red chili pepper, finely chopped
1/4 tsp. cayenne pepper, ground
1 Tbs. Extra virgin olive oil
1 Tbs. (low sodium) soy sauce
Directions
Take well rinsed (and soaked overnight) black eyed peas and place in about 2 quarts boiling water. Add 1 tsp. salt to water. Boil rapidly uncovered for about 25-30 minutes (or until beans are soft). Drain and rinse over with cold water, set aside.
While black eyed peas are boiling, chop your onion, garlic, and celery and place in a stiry fry pan with 1/2 Tbs. of olive oil on medium heat. Once they are sizzling, add spices and stir frequently for about 5 minutes, or until onion is transparent and celery is just soft enough to stick a fork through (make sure to not overcook! The celery has so much more flavor if its just steamed, and still has a bit of green in it). Add black eyed peas, drizzle remaining 1/2 tsp. olive oil plus 1 tbs. (low sodium) soy sauce and stir well. Remove from heat. Add additional salt and freshly ground black pepper to taste.
