Low Carb Cornbread

Introduction

Please understand, this is not going to taste like cornbread. But it will have the texture of it. Smother it in butter and SF jam and pretend it's the real deal! Goes amazingly with bbq, soups, or just by itself late at night :D Please understand, this is not going to taste like cornbread. But it will have the texture of it. Number of Servings: 6

Ingredients

    1 cup almond flour
    1 tsp baking powder
    2 eggs, beaten
    2 Tblsp heavy cream
    2 Tblsp water
    1/4 c butter, melted
    1 tsp Splenda or Xylo-sweet

Directions

Preheat oven to 350 degrees F. Combine almond flour and baking powder. Add the cream, water, sweetener, and eggs. Stir to combine with melted butter. Spray muffin cups with non-stick spray, or grease each cup with refrigerated bacon fat. Divide batter amongst 6 muffin cups. Bake for 15 minutes or until edges are slightly browned and the tops are firm to touch. ENJOY!!
