Banana Bread

Introduction

Recipe common in Newfoundland. Adapted to have less sugar and half brown instead of all white. Recipe common in Newfoundland. Adapted to have less sugar and half brown instead of all white.
Number of Servings: 10

Ingredients

    1/2 cup Butter (1/4 lb)
    1/2 cup Splenda
    1/2 cup Brown Sugar
    (you can sub the splenda and brown sugar for 1 cup of regular sugar if you prefer)
    2 Eggs
    3 Bananas (mashed)
    1 3/4 cups Unbleached All Purpose Flour
    3/4 tsp Baking Soda
    1/4 tsp Salt

Directions

Cream butter & sugar. Add eggs. Sift flour, baking soda and salt. Add to creamed mixture. Add the bananas. (mix well). Bake in loaf pan for 45-60 minutes at 350. Check after 30 minutes and adjust accordingly.

Serving Size: Makes 1 loaf (approx. 10 slices)
