Dreamy Avocado Dressing

A great way to work healthy fats into your diet!

Follow quantities as written for a thicker dressing that also makes a terrific dip. Add more yogurt for a creamier texture that makes it a little easier to toss. Either way, it's outstanding!
A great way to work healthy fats into your diet!

Follow quantities as written for a thicker dressing that also makes a terrific dip. Add more yogurt for a creamier texture that makes it a little easier to toss. Either way, it's outstanding!

Number of Servings: 4

Ingredients

    1 ripe avocado, cubed
    1/2 cup plain nonfat yogurt
    1 clove garlic
    1 Tbsp. minced red onion
    1 Tbsp. lemon juice
    2 Tbsp. finely chopped fresh parsley

Directions

Place all ingredients in a blender or food processor and mix until smooth. Chill, and then toss with chosen salad ingredients just before serving. Makes 4 servings.
Preparation Time: 10 minutes


Serving Size: Makes approx 4 1/2 cup dressing servings for a large salad
