Lucious Chicken Fruit Salad

My family asks for this dish all the time and it is one of my most requested recipes from friends. This is a perfect hot summer's day lunch or dinner meal in itself served on top of lettuce leaves, so light and refreshing. This is a perfect hot summer's day lunch or dinner meal in itself served on top of lettuce leaves, so light and refreshing.
Number of Servings: 12

Ingredients

    4 cups chopped, baked and cooled, skinless chicken breasts (about 4 chicken breasts)
    1 cup low-fat Hellman's mayonnaise
    2 teaspoons FRESH lemon juice
    1/2 teaspoon salt
    4 cup apples (about 4 large apples) cored and diced to the size of the pineapple chunks - LEAVE THE SKIN ON (Use Red Delicious or Honeycrisp or any sweet, crisp, red-skinned apple)
    2 cups pineapple chunks, drained (I use Dole's Pineapple Chunks packed in OWN Juice)
    1 cup celery, chopped
    1 cup pecans, chopped or broken into pieces


Directions

In a large bowl, combine all the prepared ingredients and mix well. Cover the bowl with plastic wrap and refrigerate the salad for about 6-8 hours (until well-chilled) or overnight. Mix again before serving.

Serving Size: Makes 12 1-cup servings
