Sweet tater hash

Introduction

Just something my hubby and I made up with what we had available. Just something my hubby and I made up with what we had available.
Number of Servings: 4

Ingredients

    1 cup cubed sweet potato
    1 cup frozen yellow corn
    1 yellow bell pepper diced
    1/2 medium onion diced
    1 tbsp cinnamon
    1 tsp salt
    1 tsp pepper
    dash jamaican jerk seasoning
    olive oil in misto

Directions

Preheat oven to 375. Add sweet potato, corn, bell pepper and onion and mix in a bowl. Spray with light coating of olive oil (we used our Misto) add cinnamon, salt, pepper, and jamaican jerk seasoning and toss to coat. Spread evenly in 11 by 7 baking dish. Cook 25 minutes, or until sweet potatoes are tender to your liking. Makes 4 1-cup servings.
