Salmon Salad with Couscous

Introduction

Quite the posh lunch, also quite filling, and packed full of nutrients (but without the posh pricetag... LOL) Quite the posh lunch, also quite filling, and packed full of nutrients (but without the posh pricetag... LOL)
Number of Servings: 3

Ingredients

    1 large can pink salmon (around 400grams)
    1 large cucumber
    100g fat free mayo dressing or salad cream
    1 tbsp dried dill
    1 cup dry couscous
    2 cups watercress/spinach/rocket (or other similar super-food)
    1/2 lemon juiced
    Black pepper to suit

Directions

Prepare the couscous by covering in boiled water as generally directed on the packet. Set aside to cool. Chop cucumber (don't peel) into small cubes. Mix together with salmon and mayo/salad cream, lemon juice and dill. Divide couscous into 3 portions and spoon 1/3 salmon mixture on top of each portion. Sprinkle with pepper and then finally cover with chopped watercress. The portions can then be taken to work as quite a substantial lunch over the next 3 days.
