Thai-Style Chicken Breasts with Spinach

Ingredients

    Lite Coconut Milk, 1 cup
    Garlic, 3 cloves , minced
    Ginger Root, 2 TBL, minced
    Paprika, 1 TBK
    Lite Soy Sauce, 1 TBL
    Asian Fish Sauce, 1 TBL
    1 tsp grated lime zest
    1/4 tsp crushed red pepper
    4 boneless, skinless chicken breast halves (about 4 oz each)
    Spinach, fresh, 1 package (10 oz)
    Cilantro, raw, 3 TBL
    Sesame Oil, 1 tsp
    Brown Sugar, 1 TBL, packed
    2 Cup Brown Rice
    Coconut, toasted, 4 tsp

Directions

In a large saucepan, bring the coconut milk, garlic, ginger, paprika, soy sauce, fish sauce, lime zest, and crushed red pepper to a boil.


Cook over medium-high heat, stirring occasionally, until the flavors are blended and the mixture thickens slightly, about 8 minutes.


Add the chicken; reduce the heat and simmer, covered, just until the chicken is cooked through, about 10 minutes. Add the spinach, cilantro, sesame oil, brown sugar and salt; return to a boil. Reduce the heat and simmer, uncovered, stirring occasionally, until the spinach wilts, about 2 minutes longer. Serve with 1/2 cup rice and sprinkle with 1 tsp shredded coconut.

One serving = 1 breast, 1/2 cup sauce, 1/2 cup rice and 1 tsp coconut
