Mushroom, Onion and Spinach 2-Egg Omelet

Introduction

Easy egg white breakfast omelet. I cut everything the night before and leave it covered in the fridge for the next morning. Easy egg white breakfast omelet. I cut everything the night before and leave it covered in the fridge for the next morning.

Ingredients

    Onions, raw, .25 cup, chopped
    Mushrooms, fresh, .25 cup, pieces or slices
    Spinach, fresh, .25 cup
    Pepper, black, 1 dash
    Olive Oil, 1 tbsp
    egg white, fresh, 2 large
    White Bread, 1 slice, thin

Directions

1. Chop mushrooms, onion and spinach.
2. Pour 1 tbsp olive oil into a small frying pan over medium heat.
3. Put chopped ingredients into the pan and sautee on low heat until onions are clear.
4. While ingredients are sauteeing, separate 2 eggs and put the egg whites into a bowl (discard yolks) and stir with a fork.
5. Add splash of milk and black pepper to eggs white and stir.
6. Add egg mixture to pan on low heat and allow to cook for about 5 minutes. You can make slits in the omelet so that the top cooks faster.
7. Once the top isn't runny, flip it over and cook for about one minute. At this time you can toast your piece of bread.
