Chipotle Chicken Enchiladas

Introduction

Chipotle seasoned chicken stuffed inside white corn tortillas topped with spicy enchilada sauce and mexican style cheese blend. Chipotle seasoned chicken stuffed inside white corn tortillas topped with spicy enchilada sauce and mexican style cheese blend.

Ingredients

    2 Mission Brand White Corn Tortillas
    1/2 TBSP Cup Ortega Taco Chipotle Seasoning
    3 oz. Baked or Grilled Chicken (Precooked)
    1/4 cup Old El Paso Hot Enchilada Sauce
    1/4 cup Mexican Four Cheese Blend
    1/8 cup of Water

Directions

Preheat oven to 350 degrees. Add chicken to skillet or saute pan and sprinkle with chipotle seasoning. Add water to chicken and seasoning and stir for 5 minutes or until water is almost evaporated.

Wrap corn tortillas in paper towel and microwave on high for 30 seconds. Remove chicken from heat and tortillas from microwave.

Coat a small baking dish with cooking spray. Fill corn tortillas with half of the chicken. Roll and place them in the baking dish so that seem faces the bottom of the baking dish. Repeat for other tortilla and remaining chicken.

Pour sauce evenly over the two tortillas. Sprinkle the cheese on top of sauce and tortillas.

Bake on 350 for 15 minutes.

Serving Size: 2 Enchiladas
