Spinach Dinner Crepes

Introduction

These delicious crepes are made with spinach chicken and cheese. I get compliments on them every time I serve them. Watch out, they are very filling. These delicious crepes are made with spinach chicken and cheese. I get compliments on them every time I serve them. Watch out, they are very filling.
Number of Servings: 15

Ingredients

    1 Package frozen Spinach
    2 boiled chicken breasts
    1 cup cheddar cheese
    1 can Campbell's cream of Mushroom soup Low fat
    1 large egg

    12 dinner crepes

    Make crepes with

    1 cup flour
    1 1/2 cup milk
    1 large egg
    1 tbsp oil

    Topping

    1 cup chicken broth
    1 tbsp margarine
    2 tbsp flour

Directions

Preheat oven to 375.

Mix all ingredients to make crepes. In a crepe pan warmed on med heat, slowly cook all crepes. Should be 12 total.

Mix all ingredients for filling.

Fill crepes with filling and roll up like a burrito. Place next to each other in a casserole dish.

add chicken broth and bring to a boil. Boil until mixture is fairly thick, similar to a hallondaise sauce. Pour sauce over filled crepes
