Introduction

Number of Servings: 7

Ingredients

    4 tsp olive oil
    1 medium onion
    6 cloves garlic or garlic powder
    6 mushrooms, sliced
    16 oz chicken, boneless/skinless, cubed
    1 cup bulgur (with soy)
    2 cups vegetable broth (or chicken broth)
    1 15 oz can black beans with juice
    2 tbsp curry powder or taco seasonining

Directions

Add olive oil to skillet, heat on medium. Add onions and saute; add mushrooms. Saute chicken in same pan until browned. Add remainder of ingredients and cook covered for 25 minutes

Serving Size: Makes 7 one cup servings
