Cranberried Brown Rice with Carmelized Onions

Number of Servings: 5

Ingredients

    1 cup brown rice
    2 cups water
    1 tablespoon butter
    1/2 cup dried cranberries
    1 tablespoon butter
    1 small onion -- chopped
    1 teaspoon brown sugar
    1/2 teaspoon salt

Directions

Combine rice, water and butter in a pot with a tight-fitting lid. Bring to a boil. Stir once. Cover with lid. Reduce heat simmer 30 minutes. Stir the cranberries into the rice replace the lid and let sit while you prepare the onions.

Saute butter , onion, and brown sugar together for 5-10 minutes.
Add onions to rice and cranberries. Add salt and stir well

Serving Size: Makes 5 3/4-cup servings
