15 med sized red potatoes 1 cup onion 1 cup chopped red bell pepper 0.5 cup hominy 4 slices of bacon, chopped 0.4 cup of black beans 0.3 cup of chopped green chili's 1 tbsp olive oil 1 cup shredded cheddar cheese salt & pepper to taste 1 tsp chili powder 1 tsp garlic powder
Boil potatoes until fork tender, Chop onion, bacon, bell pepper. Start to sautee bacon, add onion and bell pepper, when onion and bell pepper become tender add salt & pepper, garlic powder and chili powder. Add chopped green chili's and hominy, chop red potatoes in half, add tbsp of olive oil to cooking mixture and then add potatoes. Cover with a top let cook for about 15 more minutes, occasionally stiring. Taste to make sure it is seasoned properly. Serve and sprinkle with cheddar cheese.
