Introduction

I scoop this up with corn chips or brown rice chips. With some Daiya cheese it makes a tasty dinner entree that seems unhealthy but isn't. I scoop this up with corn chips or brown rice chips. With some Daiya cheese it makes a tasty dinner entree that seems unhealthy but isn't.
Number of Servings: 4

Ingredients

    1 tbsp canola oil
    2 cloves garlic, chopped fine
    1 pkg Yves Original Veggie Ground Round
    1/2 jar of President's Choice tomatillo verde salsa, or your choice
    1 cup frozen sweet corn kernels
    (optional - Daiya 'cheddar cheese' for topping)

Directions

Heat oil in a small frying pan over medium heat and saute garlic for 1 minute (don't let brown). Add ground round and stir to break up and coat in oil. Let fry for 5 minutes (should be hot through), stirring.
Add salsa and cook 5 more minutes, stirring occasionally. Add corn and cook until heated through.
If desired, top with Daiya and microwave until melted. Scoop with corn chips or rice chips.

Serving Size: Makes 4 servings
