May want to ease up on the coffee or leave it out or use instant because it can be a bit gritty - and it adds LOTS of caffeine!

Number of Servings: 9

Ingredients

    3 T. Pnut Butter
    1 c. vegan choc chips
    1c. Whole Wheat flour
    1 c. unbleached white flour
    1 tsp. baking powder
    1tsp. salt
    1/2 c. Sucanat
    1/2 c. finely ground coffee
    1 c. canola oil
    1 c. maple syrup
    1/2 c. soy milk
    1/4 c. vanilla extract

Directions

preheat to 350. line bottom of 8" pan with parchment.
Sift dry ingredients together in large bowl.
In another bowl mix sucanat, ground coffee, oil, syrup, soy milk & vanilla.
Add wet ingredients to dry. stir in Pnut butter, then choc. chips.
Spread in baking pan and bake for 18-20 min until toothpick comes out clean. Let cool in pan. Cut and serve.

Serving Size: makes 9 huge brownies
