Stuffed Peppers

Introduction

These are really yummy and make great leftovers. This recipe is with regular ground turkey. You can also use the light turkey to make it even less calories/fat. Number of Servings: 6

Ingredients

    1 pound ground turkey
    6 green bell peppers
    1.5 cups cooked long grain white rice
    14.5 oz. can Hunts all natural tomato sauce
    1 cup chopped onion

Directions

Pre cook rice.

Cup tops off peppers and hollow out insides. Wash inside and out. Boil peppers for 10 minutes to soften slightly.

Saute turkey and chopped onion. Drain fat. Add tomato sauce (except for 1/4 cup) and let simmer. You can season to taste. I like a little bit of garlic salt. Add 1.5 cups of cooked rice, mix well and let simmer on low for a few minutes.

Stuff turkey/rice mitxture into peppers standing up. Spoon remaining sauce over each pepper. Cover with foil and cook for 45 mins at 350. Uncover and cook for another 15 minutes.

Serving Size: Makes 6 stuffed peppers
