IntroductionGot this from the Dec. 2007 Cooking Light magazine. I have added in the seeds, flax and changed the nuts to pistachios instead of pecans. Got this from the Dec. 2007 Cooking Light magazine. I have added in the seeds, flax and changed the nuts to pistachios instead of pecans.
6 cups Rolled Oats (not instant or quick)
1/4 cup Sliced Almonds
1/4 cup Chopped Pistachios (any nuts you want)
1/4 cup Unsalted Sunflower Seeds
1/4 cup Pumpkin Seeds
4 Tbs Flax Seed Meal (ground flax)
1/4 cup Crude Wheat Germ
2 Tbs Packed Brown Sugar
1/3 cup Maple Syrup
1/4 cup Honey
1/4 cup Pineapple Juice (orange juice also works)
1/2 tsp Pure Almond Extract
1/4 cup Cranberries, dried, sweetened (craisins)
1/4 cup Chopped Dried Apricots (any dried fruit you want)
Bake at 300 for 45 minutes, stirring every 15 minutes.
Once out of the oven, add cranberries and chopped apricots. Let cool. Store in an air tight container for a week.
Great on yogurt or baked apples.
