Orange-Sesame Chicken

Introduction

This is a recipe from the March 2011 issue of Prevention Magazine. I made a couple of changes and cut the recipe in half as I only cook for two. Ingredients

    3/8 Cup Orange Juice
    1/8 Cup Cider Vinegar
    1 Tbsp Reduced-Sodium Soy Sauce
    1/2 Tbsp Brown Sugar
    1 tsp Cornstarch
    1 Tbsp Sesame Oil
    3/4 Pounds Chicken Breast, sliced
    1 Clove Garlic
    A pinch of ground ginger
    1/2 tsp Red-Pepper Flakes
    3 Carrots, sliced
    1 1/2 Cups Frozen Peas, Thawed
    1 Tbsp Toasted Sesame Seeds

Directions

1. Combine orange juice, vinegar, soy sauce, sugar, and cornstarch in small bowl and whisk until smooth.

2. Heat the sesame oil in a large frying pan over medium-high heat. Add chicken, garlic, ginger, and red pepper flakes. Cook until chicken begins to brown, 4 to 5 minutes.

3. Add carrots and peas. Cook until carrots begins to soften, 2 to 3 minutes.

4. Reduce heat to low and add juice mixture. Cook 2 to 3 minutes longer, scraping up any browned bits on bottom of pan. Sprinkle with sesame seeds and serve immediately.

Serving Size: Makes 2 generous servings
