Introduction

This is sort of like a spoonable cornbread, but with pineapple instead. This recipe has all the original ingredients, but I'd make it with lower calorie substitutes. Number of Servings: 16

Ingredients

    3 eggs
    3/4 cup sugar
    1/2 cup milk
    1/2 cup melted butter or margarine
    1 large can crushed pineappled (drained, in heavy syrup)
    4 cups soft bread cubes (small pieces, 1/2 to 3/4 inch cubes)

Directions

Preheat oven to 350 degrees
PAM or grease a 1.5 quart casserole dish (rectangular or square)
Mix eggs and sugar
Blend in Milk, butter, drained pineapple, bread cubes
Pour into pan
Bake uncovered for 45 minutes or until nicely browned on top

Serving Size: This makes about 16-20 2"x2" servings.
