HCG - Phase 3 Lasagna

Ingredients

    2 medium zucchini, sliced into rounds (divided)
    1 tomato, quartered then sliced
    1 jar sugar free Marinara Pasta Sauce (Newman's Own)
    4 tsp Italian Seasoning blend (sugar-free)
    8 ounces browned ground beef (or venison)
    1 cup cheddar cheese, shredded
    1 cup Italian 4-cheese blend, shredded

Directions

Preheat oven to 350. Spray 9x13 baking dish with cooking spray. Brown ground meat with spaghetti sauce and 2 tsp of seasoning mix. Place 1/2 zucchini rounds in bottom of pan. Sprinkle with seasoning. Top with sliced tomato, then add 1/2 of browned meat mixture. Top with 1/2 of each cheese. Layer with remaining 1/2 of zucchini rounds, sprinkle with more seasoning mix, top with remaining 1/2 of meat mixture, top with remaining cheese. Bake in preheated oven for 30-40 minutes until vegetables are tender, cheese is melted and sauce is bubbling over cheese! Remove from oven and let stand for 10 minutes before serving. DELICIOUS!

  • haven't made this recipe yet looking forward to it but i'd like to caution against the use of packaged cheese products. look carefully they add powders and extra carbs to stop the cheese from sticking to itself. read the ingredients in the food lables. - 4/17/11
