Saute bell peppers and mushrooms

Introduction

Fast, easy and delicious. Good as a side dish with chicken or can accompany hot cooked rice or mashed potatoes. Anyway, my family enjoys this dish often. Fast, easy and delicious. Good as a side dish with chicken or can accompany hot cooked rice or mashed potatoes. Anyway, my family enjoys this dish often.
Number of Servings: 3

Ingredients

    1. Mushrooms, fresh, 1 pound
    2. 1/2 small onion, slised thinly
    3. 1 bell pepper, yellow or orange
    4. 1 Tbsp olive oil
    5. 1/4 cup light sour cream.
    6. Bay leaf, black pepper, salt (optional)

Directions

1. Slice onion thinly, slice pepper into strips. Heat the oil in a large pan, add onion and pepper strips and saute over medium heat for 2 min. Add mushrooms, bay leaf, salt and pepper, stir everything well, reduce heat to medium-low, cover and saute for 10 more minutes. Add sour cream, uncover, increase heat to medium-high and let the most of the liquid evaporate, stirring often, about 3 more min. Enjoy hot or at room temperature.
Makes 3 servings, 180 grams/about 1 1/4 cups each.
