Creamy Bacon Horseradish Sprouts

Introduction

A creamy & spicy way to serve brussels sprouts! A creamy & spicy way to serve brussels sprouts!
Number of Servings: 6

Ingredients

    * 1 1/2 pounds Brussels sprouts, trimmed and halved
    * spray oil
    * sprinkles of salt, pepper and garlic powder
    * 3 tablespoons Hormel bacon bits
    * 3 tablespoons reduced-fat sour cream or plain yogurt
    * 2 teaspoons prepared horseradish (add more to taste)
    * 1/4 teaspoon salt
    * 1/8 teaspoon freshly ground pepper
    * 1T water

Directions

Heat oven to 400

1. Prepare brussels sprouts for roasting: Slice off a very thin piece from the root end of each sprout. This should release the outer leaves which can be removed to find the clean leaves inside. Cut sprouts in half, or large sprouts in quarters.

2. Place sprouts, cut sides up, in a shallow, rimmed pan (lined with foil for easy clean up!). Mist lightly with spray oil, then sprinkle with salt, pepper and garlic.

3. Roast sprouts for 20-25 minutes or until crisp tender and browning. (Sprouts could also be steamed. If you chose to steam, leave the water OUT of the dressing)

4. While sprouts are roasting, prepare the dressing: Mix bacon bits, sour cream, horseradish, water, salt and pepper in a medium bowl.

5. Add hot sprouts to dressing bowl and toss to mix well!

Serving Size: Makes 6 1/2C servings
