Creamy Tomato and Garlic Chicken

Introduction

This dish is a bit high and calories and fat due to the heavy cream. Substitutions may be in order, but be aware that you will lose some of the creamy texture as a result.

This dish is a bit high and calories and fat due to the heavy cream. Substitutions may be in order, but be aware that you will lose some of the creamy texture as a result.

Number of Servings: 6

Ingredients

    1.5 cups heavy cream ***
    4 chicken breasts slow cooked the night before with MS Dash Italian seasoning and garlic powder
    1 can Del Monte diced tomatoes (no salt) Basil, oregano and garlic flavor (14.5 oz)
    1/4 cup red onion finely chopped
    4 tbsp crushed garlic
    Mrs Dash Italian seasoning and garlic powder to taste

    1/2 container (8 oz) Barilla Farfalle noodles

Directions

NOTE: This recipe was put together to use 4 leftover chicken breasts hat were cooked the night before.

Cook the chicken the night before in a slow cooker with nothing but spices and water. (I did this to avoid fat and sodium).

Boil the bow tie pasta according to package directions. DO NOT season.

In a skillet cook the tomatoes, onions, garlic until warmed up. Add chicken and spices. Cook on medium/low heat until flavors have incorporated.

Add in the pasta and heavy cream. Add more spices if desired.

** This dish would have turned out well enough with 1 cup of heavy cream rather than 1.5. Also, half and half would be acceptable, but might not turn out as creamy.

Cook covered on medium until most of the liquid has cooked out. Serve immediately.

Serving Size: Makes 6 servings approx. 1.5 to 2 cups
