Zucchni Quinoa Lasanga

Ingredients

1/8 cup crumbled feta cheese
1/2 cup dry quinoa
1 cup marinara sauce
1/8 cup onions, minced
1 slice fat free cheese
2 tbsp parmesan cheese
1 large zuchini
garlic powder, to taste
1 tsp dried oregano
1 tsp dried parsley
1/4 cup spinach
Directions
Preheat oven to 400 degrees.
Thinly slice zucchini into lasanga "noodles" (Need 6 total)
Place on paper towel and sprinkle with salt. Cover with another paper towel (to absorb moisture). Let sit while cooking quinoa.
In a pot, combine quinoa with 1 cup water, onions, and garlic powder. Bring to boil. Reduce heat and cover until all water is absorbed.
Add in dried herbs, feta cheese, and spinach. Stir over low heat until spinach wilts. Add salt and pepper to taste.
In a loaf pan, pour enough marinara sauce to cover bottom (1/3 cup). Layer in 3 zucchini slices (with a new towel, gently squeeze out all excess moisture you can). Cover with 1/2 the quinoa. Cover with another 1/3 of the marinara. Add 3 more zucchini slices; cover again with remaining quinoa. Top with remaining marinara sauce. Slice cheese in half. Place one half on each side of the lasanga. Sprinkle on parmesan cheese.
Place in oven and cook for 30 minutes.
