Banana Peanut Flour Muffins

Introduction

These are very moist, filling muffins. The peanut flour adds a lot of protein. The sugar has been cut in half from the original recipe and could possibly be eliminated completely because the banana adds a lot of sweetness.

Number of Servings: 12

Ingredients

    1 cup Trader Joe's Peanut Flour
    1 cup Whole Wheat Pastry Flour
    1/2 cup old fashioned oats
    3/4 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon
    2 eggs
    1 1/2 cup mashed banana (310 grams)
    2/3 cup unsweetened vanilla almond milk
    1 tsp vanilla extract

Directions

Heat oven to 350 degrees.

Mix flours, oats, cinnamon, salt and baking soda. In a separate bowl combine eggs, banana, vanilla and almond milk. Combine dry and wet ingredients.

Spray muffin pan with non-stick spray. Scoop mix into pan. Bake for 18 minutes or until toothpick comes out clean.

Makes 12 muffins.
