Southwest-style Hash Browned Potatoes

Introduction

Ingredients

    Frozen Hash Browns, 2 cup
    Bell Peppers, 1 cup, chopped (any color, or mixed)
    Onions, raw, 3 slice, large (1/4" thick) minced
    Olive Oil, 1 tbsp (remove)

Directions

Heat oil in large skillet.
Add minced onion and hash browns to skillet, spreading evenly. Cook, uncovered, until one side is brown, then turn.
Add peppers.
Stir frequently until peppers are hot and beginning to wilt and potatoes are evenly browned.

Makes 4 servings.

Serving Size: Makes 4 servings of approximately 2/3 cup after cooking.
