Quiche Cups, Smart Bacon & Veggies

Introduction

Slight modification of the South Beach recipe. Reheat in microwave. Suitable for freezing. Slight modification of the South Beach recipe. Reheat in microwave. Suitable for freezing.
Number of Servings: 8

Ingredients

    1 1/4 c liquid eggs whites + 1 whole egg
    1/2 cup diced, each, green & red peppers
    1/4 c chopped parsley
    6 scallions, chopped
    2 large mushrooms, chopped
    2 cloves diced garlic
    8 slices chopped Smart Bacon

Directions

Mix vegetables and Smart Bacon together, then set aside. In a separate bowl, whisk eggs and whites until frothy. Pour over vegetable and bacon mixture and stir until well incorporated. Spray muffin tin with cooking oil. Pour mixture in to top. Bake at 350 for 25 minutes. 8 servings per recipe.
