Introduction

Our family loves Sheppard's pie. We found a way to ensure that we are eating a serving size and not what we think is a serving size! Our family loves Sheppard's pie. We found a way to ensure that we are eating a serving size and not what we think is a serving size!
Number of Servings: 12

Ingredients

    Mashed Potatoes
    24 ounces worth of potato, boiled
    2 Tbs butter (I used Smart Balance Heart Right Light)
    1/2 cup Milk (I used 1% milk)
    1 tsp black pepper

    12 ounces Hamburger cooked
    90/10 lean hamburger
    garlic powder (to taste)
    onion powder (to taste)
    Salt (to taste, my recipe omits)
    Pepper (to taste)

    12 ounces Corn
    I used Summer Crisp Canned Corn. For creamier muffins, use creamed corn. For healthier use frozen. Can also substitute other veggies (peas, etc) for a variety.

Directions

Potatoes:
Boil water for the potatoes. Add potatoes and cook until fork-tender. (while potatoes are cooking, prepare hamburger & tins) Drain cooked potatoes and place back in the pan. Add milk, butter, and pepper. Using a hand mixer, blend on medium until the potatoes are the texture you prefer.

Hamburger:
While potatoes are cooking, cook the ground hamburger with seasoning of your choices thoroughly.

Prepare the muffin tins:
Lightly spray with Oil. Place 1 ounce of cooked hamburger at the bottom of each muffin tin. Press flat with spoon. Add 1 ounce corn on top of hamburger. Press flat with spoon. Once mashed potatoes are ready, place 2 ounces of mashed potatoes on top of the corn.
