HCG - Phase 3 - Cabbage Lasagna

Ingredients

    1/2 head cabbage, steamed until leaves are pliable
    4 tsp olive oil
    4 cloves garlic, minced
    1 onion, chopped
    1 green pepper, chopped
    1 pound ground beef
    8 ounces fat free ricotta cheese
    1 cup Italian cheese blend
    1 cup cheddar cheese
    1 (6oz) can tomato paste, sugar free
    1 (8oz) can tomato sauce, sugar free
    Italian seasoning blend, sugar free, to taste
    salt and pepper to taste

Directions

Preheat oven to 350. Steam cabbage leaves until tender, trim from core and separate. Put olive oil in large skillet over medium-high heat, add garlic, onion and green pepper. Saute until translucent. Add beef and cook until browned. Drain any fat. Add tomato paste, tomato sauce and the seasonings. Spray baking dish with non-stick spray. Line bottom of 9x13 pan with enough cabbage leaves to cover pan. Top with 1/2 the meat mixture, 1/2 the cheese and 1/2 the ricotta cheese. Repeat layers. Bake covered for 20 minutes then uncover and bake additional 5-10 minutes to brown the top.
