Ingredients

    Sirloin & Okra Stew



    1 lb of Lean Ground Sirloin
    2 cups cut okra, fresh or frozen
    1 medium onion, chopped
    2 large tomatoes, chopped
    1 mediums green pepper, chopped
    1 cup sliced mushrooms
    1 seeded, chopped hot pepper OR red pepper flakes to taste (optional)
    1/2 tsp black pepper
    2 tablesp lite soy sauce
    1 can stewed tomatoes
    2 tbsp olive oil
    2 cups white rice or brown rice

Directions

Using a heavy frying pan, heat oil and cook okra until no longer "ropey".
Add onion, pepper and beef, cook until done.
Add tomatoes, mushrooms and seasonings.

Cover and cook on low about 30 minutes or until okra is done. Cook rice in separate pot. Serve meat dish over rice.

  • I used frozen okra and bell peppers from my garden; canned mushrooms and tomatoes. I'm sure it would be even better with the fresh veggies. I will make this again, both ways. Always looking for good okra recipes. - 1/13/10
