Trader Joe's Seafood Blend (1 bag), Brown Rice, Diced Tomatoes, 1 large onion, fresh squeezed lemon juice, clam juice, 1 green pepper, 3 garlic cloves, 1 cup sherry, 3 tbsp olive oil, water
Cook brown rice according to package directions. Defrost seafood blend. Squeeze lemon juice. Chop onions, garlic, green pepper, and any desired herbs. Saute seafood until shrimp is lightly pink and set aside (don't have to cook all the way). Saute onions and peppers until browned. Add garlic and cook until fragrant. Add diced tomatoes, including liquid. Add any desired herbs, I really like tarragon and cilantro in this dish. Add clam juice and seafood. Cook until seafood is done. Mix with rice in a large pot. Cook until desired thickness. Typically you don't want it to be stew like, more rice with sauce. Serve with a splash of the remaining lemon juice to taste.
